Well, you didnīt give information about what type of music you are looking for. The Czech Republic is a hotbed for any sort of music. The people there are musically highly acomplished in about any kind of genre.
Since my main genre is bluegrass, here is what I know.

If not, why not contact the Czech Bluegrass Music Association (http://www.bacr.cz/english.php) or one or the other great czech luthier (Rosta Capek: http://www.capekinstruments.com/index.php, who by the way organizes a John Cowan, Brooks & Aldridge concert in Prague in Feb.; Jaroslav Prucha: http://en.pruchabanjos.cz etc.). Czech bluegrassers are very (!) helpful and welcoming.
I donīt know anything about Budapest but I found this: https://de-de.facebook.com/bluegrassbudapest/. Check out Lee Bidgood's book, Czech Bluegrass. Not a resource for current jams but an interesting read about Bluegrass as it's evolved in the Czech Republic.
