Default Help with this piece? :)

I came across this piece on Youtube and found it really interesting I don't speak Spanish but I think it's his own short composition C: Unless it's a song, I don't know XD

    http://www.youtube.com/watch?v=QyDXnG2ZWsA

Obviously it's too advanced for me (I'm a beginner :D) and I haven't had much luck finding music online that involves chords and melody so I'm not quite familiar with this technique :P Is he just playing chords and letting them ring while picking the melody? How is he strumming the end section? XD I know it's in A minor and I can pick out some of the chords and work out the melodic material, but I can't find music with chords so I don't really know what he's doing >.<

Also, does anyone know any good websites that have mandolin music using chords? I can only find things such as fiddle tunes that consist of only melody ;3 They've been good to learn and play, but I like chords :D

    Thank you very much! ^_^

That's more or less exactly what he is doing.
It is the logical consequence of enhancing melody playing with doublestops and thus make your own accompaniment. I do that quite often in ITM.
It is hardly ever written down - if you can play it you're supposed to be able to find the right chords yourself. Here is a concise intro for doublestops.

Apparently, Milanesa Napolitana is what the Spanish think is an Italian style steak - that's why he is dressed like a cook, I suppose.
