My husband and I went to Ireland last year, partially because of the music and we found great stuff in Ennis, Galway, Dingle, and Doolin. Dublin was nice but too big a city for me, personally. Dingle seemed a little touristy but like I said, we did find good music there. We stayed in an amazing hostel in Doolin (Rainbow Hostel) which also has a bed and breakfast next door (but even the hostel had private bathrooms, etc.). The owners there are great and Matty (the husband) will give you a private walking tour of the Burren - that was actually one of the highlights of our trip. Gorgeous.
Looks like this years trip to the Emerald Ilse is out, but a go next year if everything goes ok. Thanks to all who posted on this. I found it very helpful with some good info. I'll keep all of this in mind. Some unexpected things came up and we had to postpone for this year.
You might do a bit of a warm up at sessions right here in the US of A.

Otherwise, visit the festivals, they all have sessions.... we were at the Fiddle green festival up north and indeed the sessions were great....
