I used to live in Dallas about 10 years ago. At the time, the best place I'd found was Charley's Guitar Shop.

South of Dallas a ways, Don Yarborough in Gun Barrel City. He's done work for me and is not only good, but vey reasonable. Sorry, I can't locate his number.
I should have also mentioned that I tried Charley's on my old mandolin, and wasn't too happy with the quality or service. If anyone has any other names I would appreciate it.

I heard that Williams Music in Plano has a repair person. They sell a good number of violin (fiddle) family instruments. I have never used them.

It's a stretch from Dallas, but Steve Lamb at Lamb's Lutherie and Repair in west Fort Worth has a strong reputation and has done some good work for me in the past. He absolutely stands by his work no questions asked and is very cordial and easy to deal with. Here's his contact info:
