I have found a few odds and ends on Youtube about Double Stops, but I'm looking for something a bit more in depth. Do any of you have a good resource for understanding Double Stops? Thanks for any help.

One odd bit of advice is pick a key either G major or D, and do the double stops for that key inside out all up the neck.
You really need to learn them as a comprehensible group. They are all related... in the key.
This is one of the few areas of mandolin music theory where you can safely think like a guitarist!

Pickloser’s guide to double stops, right here on MC is an excellent down to the nitty gritty resource. It’s a great roadmap to learning where your double stops are. Pete Martin’s course is very thorough and organized, with lots of exercises and a good dose of theory. I’m taking Sharon Gilchrist’s course right now on Peghead Nation and it’s all about playing the melody in closed position and knowing where to find convenient double stops along the way. It’s excellent!

Wayne Benson has some good videos on YT. He's a big proponent of learning double stop scales.

Just sayin'.
Too bad, you just missed John Reischman's excellent hourlong workshop on doublestops on mandolin yesterday on PegheadNation.com. I attended and they say they will post the video but not sure if it is avaiable after the fact. Check with them.
