I realize that the key of F#/Gb isn't very common, but I still think E# and Cb should be included.

Yes, E# is F, Fb is E, Cb is B and B# is C.

7 notes scales usually use note names so that no letter note is used twice. In the key of C# we wouldn't say C and C#, we would say B# and C#. That way the letter C is not "used twice".

Yes, I know all that. You´re answering a question I never asked. I simply pointed out that you're neglecting the key of F# / Gb by omitting E# (the 7th of the F# major scale) and Cb (fourth of the Gb scale). The key of C# (seven sharps!) is virtually non-existent outside harp music or possibly classical guitar.
