There must be. I only know of Danny Bishop's shop [fiddle and fret]. Whenever I've perused CL for mandolins in the state, Asheville always seems to have the most listed

Sometimes Dream Guitars has a few but high-end acoustic guitars is their forte. Might want to give them a call to see if they have anything in stock. They do request you contact them to make an appointment before visiting. They are out close to Weaverville. As mentioned above, Danny Bishop's shop would be your best bet that I'm aware of.

Larry Brown is in Weaverville. I think his only web presence is on Facebook.

I also think that James Condino is around that area too.

And Wienman's shop is in Asheville.

I'd contact James Condino and see if he's got anything ready to play.
He goes by grandcanyonminstrel around here.

Do I remember right that there is an instrument shop in Black Mountain? Or is that Fiddle and Fret?

I'd second and third the suggestions to contact James Condino. If I were within 200 miles of Asheville I'd be making a special trip to visit him... Great instrument builder, player and great general musical resource.

Acoustic Corner is in Black Mountain. They are an Eastman dealer but may have some good used/consigned stuff. http://acoustic-corner.com/index.php
