I'm very close to getting a manocaster but would like to turn the 8 string that I'm looking at into a 5 string. Is that possible with the correct bridge and a new nut?

You'll have 3 extra tuning machines. And the if the pickups have pole pieces, they may not line up.
Have you thought about one of these? (NFI)

There are a couple in the classifieds. Do a search for Mandoblaster.

The nut will be too narrow. The nut on those are about 1" wide and five strings typically have 1.25" nut widths. I think you'll also find that the fretboard will be too narrow overall to accommodate a five string bridge. My boards measure 1 5/8" at the joint.
8 into 4 is more realistic.. Example EM150 in CGDA , 4 strings..
But as OP is looking , wanting a 5 string , then I recommend just getting a 5 string ..
