Jimmy Bryant, in the 50's, had a doubleneck - and that extra neck had some odd tuning so as to play 3rds, if I recall.

Go back far enough -- and compromise on two six-string necks -- you can get Joe Maphis and Larry Collins:

    Allen Hopkins
    Gibsn: '54 F5 3pt F2 A-N Custm K1 m'cello
    Natl Triolian Dobro mando
    Victoria b-back Merrill alumnm b-back
    H-O mandolinetto
    Stradolin Vega banjolin
    Sobell'dola Washburn b-back'dola
    Eastmn: 615'dola 805 m'cello
    Flatiron 3K OM

Joe Walsh played one with the Eagles, and the Eagles are the 'Grandfathers of modern country music', so that must count, right? (He said sarcastically . . .)
