Probably worth contacting Touchstone. They may have stuff that isn't listed on their site. They will also be able to give you the sizes of what they have.
Viola size will be fine unless you are building something pretty unusual.

I had the same problem- I recently contacted Neil at Touchstone who said ,"An average size would be around 450mm x 135mm, but we can usually supply a bit bigger if required.." so get in touch and I'm sure that they'ii sort you out.
As I was sourcing archtop wood, serendipitously a fellow luthier contacted me and sold me a whole bunch!

135 mm is enough for F style mandolin. If you are careful and won't waste too much wood for jointing you can even slice brace wood from the wider side of the wedge.
My best wood came from violin supplier from the trash pile of viola tops that had knot in the upper third - that makes it completely unusable for viola or even violin but I could cut around it on the treble side of mandolin top easily. US suppliers would promptly shorten the wedge and move the wood into mandolin category but here in EU they would throw it away or sell for bassbars or bracing.

Try David Dyke at Luthier Supplies. I have had quite a bit from him. Violin maker Tim Phillips has also had some wood for sale recently.
I was going to suggest David Dyke as well...
