Have a look at the Gotoh MA40 tuners. They make both Nickel & Gold ones. The Gold ones can be bought with 'black' tuner buttons. Whether they're 'Ebony' or plastic i don't know, but i'd assume plastic - however, they look great, I was considering replacing the Nickel Gotohs on my Ellis with the Gold / Black combo.,but i decided not to do it myself - just in case !!.
The Gotohs on my Ellis are as smooth in operation as you could ever wish for - if they weren't,i'd expect Tom Ellis not to be using them !,

For the Gold and Ebony, I'm a fan of these gorgeous tuners by Rubner

Those Rubners look mighty fine.
Yes, Rubner make some beautiful tuners and they work quite well (I use them on my flat top mandolins), but the Schaller GrandTunes and Waverlies are in another league quality wise.

I suppose that realistically it depends on how much you wish to spend. Tom Ellis offers Gotoh & Waverly tuners. I doubt very much if he'd use either if he didn't have faith in their quality & dependence. The Nickel Gotohs on my Ellis "A" style work superbly well. I can't imagine any other make of tuner at any higher price level working any better. However - it all comes down to individual taste. If Waverlys /Gotohs /Rubners & Schaller tuners all work very well - it's simply a matter of choosing one or the other & forking out the cash,
