Cheap Trick, Mandocello. Sting plays mandolin on the Soul Cages album. Barney Kessel with the Beach Boys, Wouldn't It Be Nice. Ry Cooder with the Rolling Stones, Factory Girl.
Of course, Byrds' bassist Chris Hillman played a lot of mandolin, with the Scottsvile Squirrel Barkers and the Hillmen, and a bit with the Byrds.

Nancy Wilson from Heart. Mostly played guitar in the 80s glory days, but plays a fair amount of mandolin and OM now...

Roy Orbison & the Teen Kings (pre Sun Records) kick off to Brown-Eyed Handsome Man is Electric Mandolin. Can’t get more Rock & Roll Mandolin than that.
As for Cooder & The Stones, Ry plays Mandolin on the studio version of Love in Vain, don’t think he did Factory Girl.

Ry Cooder plays mandolin on many of his songs, as well as "Love in Vain" by the Rolling Stones.

Fred plays trumpet a la Miles Davis on several Feat songs. Fred and Paul's live cd is full of interesting acoustic versions of old Feat rockers.

Hank Bentley plays a lot of bouzouki for Crowder along with all of the other instruments he plays, as well as writing. He's pretty active on the Nashville/Atlanta circuit. "Kenny" is his other picker and does most of the mandolin stuff. I haven't seen him with any other artists. I'm still trying to figure out the double stops Rend Collective uses on Build Your Kingdom. Their music is fun to play.

As an aside...Beatles do not have a mandolin on any tracks. The closest to a mandolin sound to my ears is on "For You Blue"
