This may be a stupid question, but I need to ask.
In the Getting Into Jazz Mandlin book, and in the FFcP exercises I see "home", "Thirds" and "fourths", etc.
What exactly does the "thirds" and "fourths" sections teach? Is it about the degreees of the scale?

That’s exactly it. Home is the root note. Third is the third scale note. So in C, that’s E. The Fourth is F.
The C scale is C D E F G A B C. Converting those to numbers you get 1 2 3 4 5 6 7

Interval training really helps when trying to play by ear.
You hear a melody jump and your fingers will automatically jump the same amount.
Even a little practice will help a lot.
(Jumping up and down in sixths is another one).

+1 on the interval training.
I like to double interval training and right hand exercises often. One exercise I do a lot is play the 2nd fret of some string, then play the 3rd, then back to the 2nd, then to the 4th etc in a chromatic fashion. Sometimes I'll sing along to the notes which is another great exercise to help with note identification.
I like this exercise a lot because it's chromatic - and chromatic stuff often works really nicely in jazz.
