Ok heres a 3 piece back with ebony inserts
What do you think?

I think it's a great idea, Keith, and the added class of the ebony is nothing to sneeze at.

However, I'm not convinced by the way it looks. With a single seam, or a single ebony insert, or a single black-white-black stripe, the line is logically placed because it is resolved by the neck on the top and the tailpiece on the bottom. Here, they don't relate to anything, and thereby render the back a little bit static-looking.
I don't know, but for me, it makes the back look really flat, and you see the two black lines as more prominent than the maple grain, thereby downplaying the fine flame you've spent so much time scraping and finishing.

*guilty shrug*

Just my opinion, mind you, but you did ask. *wink*

I like it.. it's different.
The white outline...realy nice!
The ebony might take away from that a bit...but it's cool.

I'm used to the "angled" look of a typical 3 piece guitar back, and think I would prefer that to the "straight" look (if it's possible to build one that way??)

Not to slag the artists responsible, but I find both of those visually offensive. I made a three piece man'lin back once, but the middle piece covered all but one inch on either side, at the widest point. The two other piece were basically just "ears", and with careful matching, joining, and sunbursting, it looked like a killer one-piece back. What I'm sayin' is three piece is acceptable if you hide it.

I happen to like the three piece look when very obvious...something different. It's good to see people trying new things, and opinions are just that....opinions

It looks like the center piece has a border of rosewood perhaps? I know that rosewood and maple have differing co-efficients of expansion. Dealing with that becomes part of the building challenge.
