I'm wondering how many cafe members have bridge saddles on their mandos. Give me some feedback on the differences in the sound and performance.

Define what you are thinking of when using the term "bridge saddles".
arch top bridges have 2 pieces ,upper and lower, and a screw and nut pair between them.
Glued on [flat]top pin bridges like on western guitars, have a saddle, the strip in a slot, that is the bridge on those.

There are also a number of, for lack of better terminology, one-piece floating mandolin and guitar bridges of wood that have a bone saddle in them.
I wish it wasn't so, but for many these days the top of an adjustable mandolin bridge is a saddle. I guess someone reckoned that strings rested on it, so...
Too many things called saddles!
