I've noticed these get quite dull quickly. Is there a recommended way of polishing these up to a shine?
Not sure what the plating is, or how thin it is - am I likely to wear through the plating with a silver polish used regularly?

Hot breath and a soft cloth if you must. If you polish the tarnish off anything, it will eventually wear away.
If the tailpiece is from about 1910 onward, it is a nickel silver alloy- not plated, so it should not be a problem polishing one of that type.

I've use Nevr-Dull for years. About as non-abrasive as you can find.

Do not assume "nickel silver" alloy.

Like many others, this one is nickel plated brass.
