However, in my head I hear the ending line in each verse as a I,V,I
Making each verse:

I,IV,
I,V
I,IV
I,V,I

Am I wrong? Is the end line in each verse just a 5 chord followed by a 1?

The first note of the last line could fit with either the I or V chord. The original by Monroe goes right to the V chord. If there is a I chord it would be for only 1 beat.
