Ah, Tucson, my old stomping ground.
Not sure of jams, but do hit the Crossroads Mexican restaurant by the dog track for some good eats.
Tucson is my old stomping ground too -- but not as old as Alan's, as I just moved from there a year and a half ago.
Irish/Celtic jams -- once or twice a month at the Rincon Market, was on Tues nights. I'd callthe Rincon market and find out (they have the best fresh fish in town, you can get it to cook yourself or they can cook it for supper). Very fun, I used to go there a lot. You might try to look up Dave Firestein (sp?), mando player, who leads that jam. Also, there was an Irish pub that had started up a jam, Dave would know about it.
Bluegrass -- I'd try looking up the Desert Bluegrass Association's website and see what they have listed. Also, there was an open stage BG session held on Tuesday nights, late, at the French Quarter bar, with the cafe's Mark Robertson-Tessi playing mandolin with the host band... probably still going on, maybe Mark will chime in here.
Have fun, there's other stuff going on in Phoenix that I know nothing about. Please go to La Parilla Suiza and get the melted cheese appetizer (#5 small, or #6 family size) and one of their table grill entrees, man I miss that place.

I left Casa Grande 25 years ago; I'm amazed how Phoenix and Tucson have grown every time I go back to visit.
I think Tucson would be the better bet. I don't think there's much of a bluegrass scene in Phx...unless of course I'm purposely being left out of the loop.

RayQ - I know that musicians in both Phoenix and Tucson have posted jams to www.folkjam.org. Just drop in the name of the city you are traveling to if you want to view a map of area jams.

Don't know if you already came and went, but here's some info to fill out MJ's suggestions:
Tuesday nights at the French Quarter from 7-11 Greg Morton (guitarist) hosts an acoustic show, heavy on bluegrass and newgrass. If you want to get up and pick some tunes, you would be welcome to do so. I'll be there tomorrow 2/13.
Jams are many. The standard bluegrass jams happen weekly. Check out:

There's an Irish jam at our new irish pub, The Auld Dubliner near the University, Sundays from 4-8.
There's a Celtic/Oldtime jam 1st and 3rd tuesday nights at the Rincon Market.
