I think we all use a number of different glues in construction, based on the application. I like LMI glue for a lot of stuff, but not everything. I think if you do a search on glues, or somesuch, you should be able to find a whole bunch of info/opinions.

I've never tried the LMI glue, so I don't have anything to say about it.
As for violins, I'm not trained in their repair, so I only work on 'fiddles' of modest value, and only occasionally, but I would never use anything but hot hide glue in their repair or construction. That is the tradition, that is what is considered correct, and that is what future repairers will expect to find.
(BTW, I have started building a violin, but it isn't going very fast because it's a pretty low priority around the shop these days. That will be my first one, and I still won't consider myself qualified to repair fine violins when it's done.)

I tried hhg on my mandolins and ended up with a big mess
I did not have time to do the clamping
I only use hhg on the tone bars
