Typically, a mandolin is about 10" wide. The top and back are about 13 or 14 inches long, unless you want all those points and scrolls and things, in which case youll need at least 15" of length.
You need to start carving with around 5/8" of thickness in the center to make a Gibson style carved mandolin top and back.
The neck wood needs to be about 1 1/2" to 2" wide, with "ears" glued on for the headstock width, and needs to be a little over 2" the other way to cut the heel and headstock out from one piece. It needs to start out about 16" long or more.

You can have one piece backs, two piece backs, one or two piece tops, one or multiple piece necks, etc, etc, so you can choose the wood to fit your design, or design you mandolin to fit your wood, or anywhere in between.
Basically, you need to have your design figured out, and get wood the size you need for that design.
