I don't know about professionals playing pancakes, but I see in your signature line that you're 'expecting' one of Terry's A/N flattops. I predict that you will love it. I sure have lots of fun with mine. Did you go oval hole or ff hole? Mine is a cedar-topped oval hole, his #14. I've had it a while now and don't think I'll ever part with it.
To my own surprise, I am now using Thomastic mittles on it and love the sound. I've tried a bunch of different strings on it, but now am hooked on these.

Only one I've seen was the feminist songwriter Robin Flowers, who played a Flatiron "pancake" when I did sound at her perfprmance 'way back in the '70's or so.
If you want to consider me "semi-pro," I play a 1987 Gibson Army-Navy Custom "pancake" signed by Steve Carlson sometimes, and a 1985 Flatiron 3K "bouzouki" OM other times. But I ain't famous, or near it...

If we consider the Kerman mandolin a pancake, then Avi AVital and all Israeli players add playing a Pancake
U.S. singer/songwriters Michael Card and Jonathan Rundman both play Flatiron mandolas as tertiary instruments (they're primarily guitar/piano guys). I bought another Flatiron mandola once from Gruhn's that had purportedly belonged to Mike Compton. Brian McDonagh of Dervish is usually seen with a flattop mandola. There's also the flattop in the famous cover photo of the Waterboys' Fisherman's Blues.

The late multi-instrumentalist Pete Zorn (also of UK bluegrass band Arizona Smoke Review) played a Flatiron pancake in the Richard Thompson Band on and off -- it was his sixth-choice instrument, after saxophone, bass, guitar, tin whistle and accordion.

He's on here, but rarely posts.
I call it his little Magic mandolin: "Just how in the world does all that sound come out of that little thing?"
That was what surprised me when I got mine back in 2012. I was amazed at this small instrument being capable of such volume. That might not be what you meant by "all that sound" but the volume and responsiveness of this small, relatively simple instrument was a big surprise to me.
Any of you who have not played one of these might want to give one a try when you have a chance. They are a lot of fun to play, add to your tonal choices (compared to arch-tops) and overall, really sound great.

Joey, I say get famous playing your pancake and you'll be on the list. And after that everyone else will want one. I'm pretty sure that's what Monroe did with his mandolin, and after that everyone wanted an F-style. Can hardly wait to see pics of what you end up with (I though your old Kentucky was cool with that pearl PG). Good luck.
