Why don't you try shellac that you have added amber color to? I think you can make the splotchy spots go away with colored shellac.

I didn't see JBovier instruments listed. They are great values!
Time is not an issue, why not spend 100 bucks on a IV kit and build a kit mandolin that you can do all that stuff to. It is great fun, rewarding and you can actually end up with a nice instrument.
Why not try some cheap picks (plectrums). You can get just about any color you want and could come up with some cool designs.
