Just been given some old softwood floorboards from a 110 year old house. These are 1 in. by 7in. by 7ft, and a couple of them are 10-15 grain lines per inch, more-or-less knot free, and very nearly perfectly quarter sawn. No idea whether this is spruce, pine, fir, redwood or whatever, but it sure looks good, and has a great tap tone. Should I use it for an A-model?

You should be able to easily determine the weight and volume. If you divide the wood weight by the weight of an equal volume of water you will get the specific gravity. #You will need a fairly accurate scale for this. #Metric measurements will be easier to work with as 1L of water weighs 1Kg. #You will want a specific gravity of .35 - .40. #Or you can cut off a 1/8 x 1/8 x 6" piece and compare its flexibility to spruce. #Or just go to it and see what happens.

Absolutely, in my opinion. Or for an F model, or whatever you want to build with it.
I love stuff like that. In fact, if you have plenty of extra, let me know.
I built a guitar once with two split cedar shakes, removed from a roof, for a top.
