I have no idea if there is something that exists. Do they have a program that you can plug in a song or tune and get it to write it out? I have a tune that I wan to learn that I for the life of me cannot figure out. Any help out there?

Guitar Pro does this. I use it all the time, downloading midi arrangements of classical ensembles for example. Guitar Pro will not only write out the score of each part but will convert them to tab for any stringed instrument or tuning as well. You can also transpose it to a different key and then export it or any of the tracks as a midi or a wav. (For example, I will mute one of the parts before exporting so that I can play along with the others.) And, of course, you can edit the score.
There is both a Windows version and a Mac version -- I've used both and the Windows tools are set up a little better but I currently am using the Mac and it is fine.

You mean write your playing or auto transpose a recording of a MIDI sequence of a song ?
for the former, I think . . Pitch to midi converters are step one.
and AFIK they work with the signal from a single string electric .
rather than mic-ing an acoustic , as the single note is more readable than the jumble from playing out of phase pairs with all those overtones of the box and such.
I'd re direct your inquirys and look in the back pages of Equipment section and the 4,5 & 8 string Electric section .

I phrased that wrong. I am trying to figure out a song that I have heard, that I cannot find the sheet music for, and have been wracking my mind finding a way to get the chords and such for the song. For what it is worth, the name of the song is Erin Gra Mo Chroi by Kathy Ryan or Colm O'/donnell.\

There is no program that I know of that can interpret a performance from, for example, a CD. It has so far proved too difficult to discriminate between various instruments and voices. There are programs that can do what you want from midi tracks and abc files.
One of those that will work for midis is Melody Assistant http://www.myriad-online.com/en/index.htm
It has a free trial version with some limitations. Once you have imported a midi file to it, it will display the score and you can get it to suggest chords. You will probably still have to work through them to decide which work best for you.
If you need to work from a CD recording (or similar) I think the best you can hope for is some slow-down software to give yourself more time to interpret what is being played. I've been recommended Transcribe but haven't tried it yet. http://www.seventhstring.com/
A feature of that is a graphic display of the notes being played, which helps in identifying chords.

There is a kind of awkward way to do it using TablEdit: Open a new file, click <File>, <Import> and select midi from the drop down menu. Navigate to the midi file you want to open, and it will import into notation (or tab if you prefer.) I've found that if I try this I have to horse around with the pickup measures, key signatures, etc. but it works after a fashion. What I usually do is import it to see where all the notes are (as I am hard of hearing and can't really hear some of the notes well) and then write it out by hand.

Most all Sequencer applications will printout sheet music from Midi files, many will do TAB as well.
Audio to Midi, or sheet music is for the most part hopeless. There are apps that will transcribe a basic monophonic melody to Midi, but aside from that you are out of luck. :)
