What kind of trade-in value should I expect at a music store for an 80s Kentucky KM 700?

There have been 2-3 similar mandolins in the classifieds. They were $600-$650. I think earthsave is pretty close in that you could expect about $300, mabye slightly less, trade-in value

maybe more .. if you bought it there, and you are buying the upgrade from the same shop.
.. a trade in ..

Consignment could get you a better % than half retail , maybe .

[I'd want an agreement, contract clause, that trial damage, shopwear,
is not coming out of your cut , if possible ..

I can't speak to this instrument's trade-in value, nor its value on the open market, but as with a car, you will receive more money for it if you sell it yourself.

Then there is the other part of the question. Trade in on what?

If you are trading for a $10,000 mandolin that has been hanging in the store for a couple of years you could probably get a little more for your trade.
