Just seems alot easier to me to do a D chop on the bar chord than the "traditional" joint-popping, finger-stretching, knuckle dislocating D chop. Is there a reason everybody insists on the more complicated chop chord?

I am not sure which D form you are talking about. There several ways to do it. I most commonly play it just like a C chop, just up two frets with the E string muted. Works fine. I will say that every form of a given chord has a different sound. Sometimes a player will do a harder form because they like the sound.
