how deep should they be should they be all the way across. seems like about half a string depth would be right. Is it?

1/3 for the wound strings and the top of the a and e should be level with the top of the saddle.

When I fitted my new bridge, I followed a recommendation here on the board to make the notches very shallow indeed, more a score than a notch. So, I used a stanley knife to score the saddle and for the wound strings, I slightly widened and deepened the score with the edge of a needle file. It works very well -- the string tension keeps the string spacing correct and the original front edge of the ebony saddle, which I've kept untouched, provides a clean straight edge for the string oscillation.
