Can someone tell me if it was common for Gibson to use a two piece top when building these back in the teens?

Two-piece tops are certainly more common than one-piece tops....

I bought the A model Will Kimble built with a two piece top, one half red the other englemann spruce, great tone. according to Will it will be a one off as it was too difficult to tune.
