Does anyone know of any software (MAC) that will create scores from recorded audio?

As far as I know, from reading that very question around here many times, and from what I know about software, there ain't none that will do what you are asking....yet. For one thing, it would pretty much have to be one monotonic (?...one tone at a time) instrument.

I'm a comp. sci. major, with a strong backing in sound engineering and music, so I know a lot about questions like those. haha

The short answer is, it is VERY hard to tell a program to decipher a collection of sound waves into music. Apart from having to use a lot of signal processing there's a lot of complex mathematics involved with the physics of sound (hello Fourier Transforms) that in this day and age, make it essentially impossible to deduce a music score from a music recording on a computer. There are a few programs that can give decent approximations. In specific Finale (very expensive I'll warn you) can create a score from any MIDI file, and has some success with writing music from a single recorded instrument. Beyond that, you'll have to wait a few years for the technology to improve.

there is a new program out there ... Digital Music Mentor that will open and analyze a wav or mp3 file and then make some educated guesses as to the chords that being played within the tune. Its a long way from perfect but actually does come close fairly often. PG Music in fact licensed this for the new version of Band In A Box ...

Digital Music Mentor only works on Windows. I own the "new" version of Band a Box for OS X and it does not have the Digital Music Mentor MP3 chord wizard ... The new Windows version of Band in a box does. A matter of fact, the OS X version is behind the Windows version in general but I still got it.
