I have noticed that many fretboard radius values are at say, 10 inches or 12 inches.
Can someone explain how that works?

A radius is the distance from the edge of a circle to it's center. A 12" radius could be thought of as a part of the surface from a 24" diameter pipe.
Or, if you wanted to imagine the 2d cross sectional curve. Tie a 12" length of string to a nail, pound it into a flat piece of wood. Pull the pencil so that the string is taught and draw a circle. That drawn curve would be the result of a 12" radius. A perpendicular cross section of a 12" radiused fingerboard would have the same curvature on top.

The larger the radius, the more gradual the side to side curvature of the fingerboard.
