I was at my favorite Sushi shop in Wausau Wisconsin. I eat there regularly and the chef knows me well. (An incredible Sushi chef by the way) Well evey now and then, he asks me to give him a recipie to try and make, and I put out "Diced Yellow Tail with Spicy Sauce and Green Onions on the inside and Wasabi flavored Tobigo (fish eggs) on the out side. He made it and I loved it, so he made it for some other patrons and they loved it. He said, since I made the roll, I could name it, I said how bout the "Mandolin Roll" and he agreed and it is now a roll that he makes! So... if you are ever at Chang Garden in Wausau, Wisconin, (and like Sushi) try a Mandolin Roll.

ok.. back to your regularly scheduled program.

Do you need three finger picks to eat it (the "roll")?

I have to make sushi on Sunday for 50 people. I'm not happy about it, but my office is having a picnic and word got around that I make "happy face" (bologna and carrots make a happy face) sushi for my kids. I'll use ham, scrambled egg and green onion, and call it redneck sushi.
