does unfinished wood get darker or lighter when left out in the sun?

what about finished wood?

Depends on the wood.
In general, light colored woods tend to darken, and dark colored woods tend to lighten, so that eventually they all look similar.
A finish can slow the process, but the color will end up about the same in the long run.

Walk into an antique store and look across the room at the furniture. From a distance you can't tell walnut from cherry from oak. It's all about the same color unless it's been refinished. Sometimes even maple and poplar are hard to tell from walnut in antiques.
